March 19th: Potluck & Butter Demo

Discussion & Demo:

Our topic is Butter!  At our last potluck there was some discussion about making butter.  For our demo Megan will show us her grandparents classic hand butter churn and tools, and I (Lisa) will demo a more modern method of making butter.

Directions:

Go EAST on 19th past the University of Oregon campus. Follow signs directing you towards Hendricks Park. When 19th ends at Fairmount Blvd., turn RIGHT. In one block, turn LEFT on Summit and go to the top of the hill where you can see the Hendricks Park Picnic Shelter. (Do not turn left on Birch.) Stay on Summit as it curves right, becoming Floral Hill Drive. (Do not turn right onto Fairmount Drive back through the woods.) In one block, when you exit the park where the houses are, Floral Hill Drive curves right at the yield sign. (Do not keep going downhill onto Sylvan.) 2210 Floral Hill Drive is the 7th house on the right that you can see; aqua, orange and gray.

Topic & Demo: Preparation of Grains, Nuts, Seeds and Legumes

One of the key principles of the Weston A. Price Foundation principles is the proper preparation of grains, nuts, seeds and legumes.  Traditional people took great care with the preparation of grains and seeds.  The seeds of plants naturally contain “anti-nutrients”.  By neutralizing these before consuming them we can improve their digestion and absorption.

Gluten containing grains (such as wheat and rye), gluten-free grains (such as rice, and corn), as well as nuts, and seeds that are used in place of grains (such as quinoa, amaranth, and teff) all need careful preparation in order to maximize nutrition.

Bring a vegetarian friend!

Although the potluck will hopefully have several non-vegetarian dishes (made with nutrient-dense meats, bone broth and animal fats), this would be a great topic to introduce to your vegetarian friends.  People who avoid the use of animal foods in particular need to make sure they are maximizing their nutrition from the grains, nuts, seeds and legumes they eat, as they tend to rely more heavily on these foods.

Our topic for this month is Natural Sweeteners. Since we are now in the midst of the “season of sugar” (from Halloween through Valentine’s Day!) it seems like a good time to discuss natural sweeteners.  The Weston Price diet is not one of deprivation, but quality does count.  How can you enjoy natural sweetness without the awful refined sweeteners, artificial colors and flavors that they put into commercial sweets?  Make your own or know how to find quality sweets.  Discussion will include: What are the natural sweeteners, which are available locally, which ones to use and what to avoid?  For our demo I (Lisa) will make a natural candy.

After our last DVD showing we had some interesting discussion about cod liver oil.  What brands to use, where to find it, how to take, etc.  At this potluck we will discuss these topics again, and for our food demo, Lisa will bring her Greener Pastures Cod Liver Oil.  Everyone will get an opportunity to sample it, both straight in flavorful mixes, and we will discuss other ways to take our number one superfood!

If approaching from the south coming down River Rd. turn Left on Maxwell Rd. then continue past the one stoplight about 3 blocks to turn Left onto Hemlock St. There is no Hemlock St on the R. Then take the first Right onto Elm Dr. 869 Elm Dr. is on the Right.  It is a blue house with white trim.

By special request, Lisa will demonstrate making Beet Kvass. This recipe comes from Nourishing Traditions. Beet Kvass is a delightfully tart and sometimes bubbly beverage. It is simple to make, and yet an important health tonic. Former Chapter Leader, Victoria, says it is the first thing she teaches to her clients, as drinking it helps them improve digestion. She also says that people will frequently have a positive reaction to it, as if their bodies are saying: “Yes, this is what I needed!”

About This Event:
This is a BYOJ party (Bring Your Own Jars).

I first proposed the idea of the “Community Food Preparation Event ” in the August ’09 Newsletter. Teri Sue has volunteered her home, and a whole bunch of fat for this event.

I don’t know if a “Fat Rendering Party” is a traditional event, but it sounds like something you would be more likely to hear about happening in pioneer days than in modern America. This is not a class so much as a get-together and an opportunity to prepare food in the company of other like-minded people. Experience hands-on participation and discussion about rendering beef, lamb and pork fat into useful lard and tallow.

Children and Guests are Welcome:
This is a child-friendly home. Teri Sue has toys and DVDs for young children.
