Topic:

Soaking nuts and seeds is one of the Weston Price Principles of Healthy Diets

Seeds, grains and nuts are soaked, sprouted, fermented or naturally leavened in order to neutralize naturally occurring antinutrients in these foods, such as phytic acid, enzyme inhibitors, tannins and complex carbohydrates. 

We will talk about how and why to soak nuts and seeds before consuming them.

What to bring?

Anything from Nourishing Traditions, the Healthy 4 Life booklet or Recipes of the Week would be wonderful.  A simple homemade meal made from scratch using natural fats is always a great contribution.

Some examples include: a roasted chicken or other meat, meat and vegetable casserole, a dish made with soaked grains, soup using homemade bone broth, pastured egg quiche or other egg dish, organic salad with homemade dressing, steamed or roasted vegetables with butter or cream sauce, fermented vegetables, fresh or cooked fruit with raw whipped cream.  If you come to the potlucks regularly, please try to bring a dish from a different category every so often.

Bring enough to share with everyone and be sure to include some traditional fats!

Topic & Demo: Preparation of Grains, Nuts, Seeds and Legumes

One of the key principles of the Weston A. Price Foundation principles is the proper preparation of grains, nuts, seeds and legumes.  Traditional people took great care with the preparation of grains and seeds.  The seeds of plants naturally contain “anti-nutrients”.  By neutralizing these before consuming them we can improve their digestion and absorption.

Gluten containing grains (such as wheat and rye), gluten-free grains (such as rice, and corn), as well as nuts, and seeds that are used in place of grains (such as quinoa, amaranth, and teff) all need careful preparation in order to maximize nutrition.

Bring a vegetarian friend!

Although the potluck will hopefully have several non-vegetarian dishes (made with nutrient-dense meats, bone broth and animal fats), this would be a great topic to introduce to your vegetarian friends.  People who avoid the use of animal foods in particular need to make sure they are maximizing their nutrition from the grains, nuts, seeds and legumes they eat, as they tend to rely more heavily on these foods.

Foundations of Health – Class 4 – Healthy Grains

Is Gluten the real “Bad Guy” or is it phytates?  Anti-nutrients found in all grains, nuts, seeds and legumes can wreak havoc on your digestive tract and de-mineralize bones; yet popular nutritional advice ignores this problem.    Here in the Willamette Valley, there is a growing movement to grow more local grains and beans, but how do we safely consume them?  Come learn how important this is to your health and the health of your family.

We will be sampling and showing how to make:

  • Breakfast cereals
