December 2018: From the Editor

Hi all,

I’m back from Wise Traditions conference!  I had a great time and have lots of photos, information and new presentations to share with all of you.  I’ll plan to give a presentation on the highlights from the conference at our January potluck, but in December we have a food demos scheduled!

Local Eugene Chapter participant, Courtney Queen, will be giving a pâté demo at our regular potluck on Dec 10th, and she is also doing a fudge demo at Natural Grocers on December 1st (not a potluck).

Our Keto Support Group, December 19th will focus on How to Start Keto, for those of you who are just starting out.

I also want to tell you about local Eugene Chapter participant, Mindy Stone, who was invited to be involved with an interview of author Gary Taubes.  Listen to the audio interview below.

DVD showings will resume in January.


December 1: Food Demo – Festive Cranberry Coconut Butter Fudge

Local Eugene Chapter participant, Courtney Queen, will be giving a food demo at Natural Grocers on December 1st!  You may remember Courtney at our potlucks for her fabulous sourdough bread and pâté! Courtney told me “I’d love to see some of the friendly faces there that we see at the potluck!”

In this fun and tasty class, chef and blogger Courtney Queen from Butter For All will teach you how to prepare a quick, festive and nourishing refrigerator fudge. Her special coconut butter fudge is made from 3 basic whole food ingredients. The original recipe can be customized for endless flavor variations and can even be made paleo and keto friendly!

Food Demo: Pâté

For the modern palate, a traditional French pâté is probably one of the easiest ways to enjoy the many benefits of nutrient dense pastured liver and vitamin rich pastured butter.

In this demo, Courtney from the recipe blog Butter For All will demonstrate her technique for soaking and cleaning poultry liver, preparing ingredients and making and serving a delicious French style Duck Liver pâté.

What to bring?

Anything from Nourishing Traditions, the Healthy 4 Life booklet or Recipes of the Week would be wonderful.  A simple homemade meal made from scratch using natural fats is always a great contribution.

Some examples include: a roasted chicken or other meat, meat and vegetable casserole, a dish made with soaked grains, soup using homemade bone broth, pastured egg quiche or other egg dish, organic salad with homemade dressing, steamed or roasted vegetables with butter or cream sauce, fermented vegetables, fresh or cooked fruit with raw whipped cream.  If you come to the potlucks regularly, please try to bring a dish from a different category every so often.

Bring enough to share with everyone and be sure to include some traditional fats!

Children and guests welcome.  Please bring dishes and serving utensils for your dish.  Thanks!

How to Start Keto

In this meeting we will discuss how to start a ketogenic diet.  What you might want to do to prepare, tips for getting started, sources for recipes, inspiration and support.  If you think you might begin keto in the new year, get yourself ready now.  We also plan to have plenty of time to share ideas from other participants, so if you are just starting out, bring your questions, and if you have been doing keto for a while, come share your tips with new people.

Note: I have made a page for information about the Keto Support Group, and a page of Keto Group References, where I will post links to other websites or handouts that were mentioned in each meeting.  I have also created a page of #boringketo photos to give you inspiration!


Gary Taubes Interview

This comes to us from Mindy Stone, a local Eugene Chapter participant who was invited to join a panel on CureTalks with Gary Taubes!  If you missed it live, you can still listen to the recording.

Eat more and pile on weight. Eat less and loose weight. Or is it that simple? HOW and WHAT should we eat to stay fit and stay away from obesity? We are talking to investigative science & health Journalist and co-founder of the non-profit Nutrition Science Initiative (NuSI.org) Gary Taubes, to discuss the relationship of Obesity with different kinds of Calories, the current state of nutrition research, and mull over some controversial concepts in nutrition science. Mr Gary Taubes is a recipient of the Robert Wood Johnson Foundation Investigator Award in Health Policy Research.

Mindy Stone, who grew up fighting a weight problem from age 11 and found success with the Ketogenic diet will join us on the panel. Mindy hosts a Keto Support group in Florence, Oregon and is passionate about food politics and how it controls what we eat. This journey has inspired her to create “Training Wheels to Health” a coaching business to help others get off highly processed foods and onto a whole foods way of eating.
